Facts
The crystallised sugar coming out of a silo is weighed electronically in batches and then fed over a jog feed chute and to the premixer uniformly to the outer chamber of the dissolving kettle. The weighing impulse for the sugar scales comes from the pump shaft. The sugar and water ratio is set using the water meter installed in the PLC. Settings for glucose syrup and sugar and the other recipe components are controlled by the pump piston stroke adjustment. The throughput amount is set by the change in the rotary speed of the pump shaft.
The sugar/water mixture is heated in the outer chamber of the dissolving kettle by a steam-heated pipe loop. This procedure dissolves the sugar crystals completely. In the middle chamber the solution is then precooked to approx. 80 % DS. In the inner chamber of the dissolving kettle the prewarmed glucose syrup is then added to the sugar solution. The finished solution mixture is continuous transferred into an intermediate container. Further components such as fat, milk and honey can be added here.
