Overview The continuous cooking machine with vacuumising and batch unloading is used to manufacture sugar batches.The cooking machine BKS 0156 is fed with either a sugar solution of 80% DS, a sugar solution from the pressure dissolver 118 of max. 85% DS or a crystallised sugar-glucose syrup-water mixture of max. 80% DS. In the chrome-nickel steel cooking coil the sugar solution is then thickened by boiling down to the required dry substance of, for instance, 96 to 97% DS.

Facts
When a mixture is added the sugar is initially completely dissolved and then boiled down as before in the bottom tubular section that has a vortex. After the mixture of boiled sugar mass and vapours has left the cooking coil it is fed tangentially into the vapour separating room. The sugar mass and vapours separate in this process. The vapours are led away and the sugar mass collects at the outfeed end of the vapour separating room.
The flow valve controls the throughflow to the vacuum room. A vacuum of up to 740 mm Hg is generated in the vacuum room: this creates a re-evaporation which further increases the dry substance of the sugar mass and simultaneously cools it down. The sugar mass collects in the vacuumising/unloading kettle. The flow valve closes the throughflow to the vacuum room after the set batch size has been reached. The sugar mass accumulates in the vapour separating room.
At the same time as the throughput is closed the ventilation valve is opened to ventilate the vacuum room. The filled kettle separates from the vacuum room, falls due to its weight and a rotary actuator automatically turns it by 180° into the unloading position. Simultaneously, the empty kettle is swung exactly into the vacuum position in a reversed movement and pushed under the vacuum room by the weight of the filled kettle. The vacuum is then rapidly created. Once the preset vacuum has been reached, the flow valve opens automatically and vacuumising of the next batch begins. The kettle in the unloading position is then emptied. This process is repeated for each cooking batch. The batch size can be adjusted and lays between 37 and 75 kg.
